Meridian Chocolate & Banana Pancakes

As Pancake Day falls the day before Valentine’s this year, our lovely client Meridian Foods has developed the perfect recipe to mark both occasions. Whether you are looking for the ideal flavour combination to kick start your pancake breakfast or dessert inspiration to serve to your loved one, Meridian’s Chocolate and Banana Pancakes offer a fuss-free treat that delivers on taste, texture and convenience.

These Chocolate and Banana Pancakes are gluten-free and created using only a handful of ingredients. They can be whipped up before work, as a quick lunchtime meal or as an after dinner treat with the added ‘wow’ factor.

For fluffy Chocolate and Banana Pancakes, try this quick and simple recipe.

Preparation time: 7-8 minutes

Cooking Time: 2-3 minutes

Makes: 4 pancakes


  • 1 large banana
  • 2 eggs
  • Pinch of baking powder
  • 1 tbsp Meridian Cocoa and Hazelnut Butter


  1. Mash the banana very well until it’s a puree. Beat the eggs and stir in to the banana along with a pinch of baking powder.
  2. Heat a nonstick pan and use ¼ of the mixture to make each pancake. Either spoon into circles or use a mould to make a heart shape. Add several drips and drizzles of Meridian Cocoa and Hazelnut Butter to the pancake once it’s in the pan and swirl with the tip of a knife before the mixture sets.
  3. Cook for 2-3 minutes on each side on a medium low heat and serve immediately with extra fruit and chocolate peanut butter.
